Olive Picking & Pressing

In the fall semester, we are lucky to be able to harvest all the fat green olives off our trees on campus and then press them for oil!! We picked the olives a few weeks ago, and then last week we pressed them.  Well, first you crush the olives in the stone spinning thing (very heavy), and then you press the olives in bags by squishing them, then more oil flows out. The oil that comes from crushing is the "extra-virgin" olive oil, and the rest is just regular olive oil.
